If you are looking for a dairy free chocolate dessert, this will make you so happy! These brownies are rich, moist, perfectly sweet and so decadent. If you are not dairy free, these are incredible with vanilla ice cream. I used the fantastic olive oil from Pure Olive. Their high quality olive oil makes all the difference for the perfect brownies. Also try their incredible vinegars for your savory dishes!
There may be organic sugar and flour in these, but between the dark chocolate, extra virgin olive oil, cocoa powder, pastured eggs and pecans I have a hard time feeling bad about eating these.
- organic cane sugar
Olive Oil Brownies
Ingredients:
4oz. 70% cocoa
.5c plus 2T extra virgin olive oil
1.5c *sugar
.25c cocoa powder
.5t kosher salt
3 eggs
1T vanilla extract
3-6oz. chopped pecans
2/3c AP flour
Method:
1. Place the cocoa in a glass bowl with the olive oil. Heat over a pan of steaming water or use the microwave, stir to combine.
2. In another bowl stir the sugar, cocoa powder and salt. Sift over the bowl of olive oil/chocolate, then whisk. Whisk the eggs in one at a time, then the vanilla.
3. Stir in the pecans, then stir in the flour just until combined.
4. Pour into a parchment lined 8×8 pan and bake in a 350* oven for 40 minutes, until a toothpick comes out clean. Let it rest for 10 minutes, then use the parchment to lift it to a rack and allow to cool for 10 more minutes.

*Organic vanilla scented sugar can be made by placing vanilla bean pods into organic cane sugar. The sugar will be thoroughly scented after a couple of weeks. Reuse the pods for as long as they keep their scent.
