My husband happens to love the Pumpkin Spice Latte, but I love to keep him healthy, so he doesn’t get to drink it anymore. For our 14th wedding anniversary we bought ourselves an espresso machine. It was the perfect gift because when we met 15 years ago I was managing a beautiful french café which he would come in to every morning after the gym to flirt. Now he gets the full menu of what my regulars called “Julie Coffee” every day.

This special treat drink has 14 grams of sugar vs. the store-bought Venti PSL which has 63 grams! Both with with a double shot of espresso and equally delicious!

Recipe makes 2 drinks.
Ingredients:
2c milk (preferably grass-fed or your milk of choice)
3T pumpkin puree
2T vanilla sugar*
1t vanilla extract
1/2t pumpkin spice mix (Trader Joe’s is great)
4 shots espresso, organic is best. (Use a strong, dark roast if you don’t have espresso.)
Fresh whipped cream**
Cinnamon

Method:
1. In a small saucepan heat the milk, pumpkin and sugar to your desired temperature (I like 190*).
2. Turn off heat and mix in vanilla and pumpkin pie spice mix. Put top on to keep it hot.
3. Brew double shot of espresso into each cup. Strain milk mix evenly in to each cup to remove any pumpkin pulp.
4. Top with whipped cream and a sprinkle of cinnamon.

My husband couldn’t believe how great this was! You can adjust the flavors to your taste. These amounts were perfect for my husband who likes it sweet and for a special treat for me, who usually doesn’t like sweet drinks.

* white sugar with used vanilla bean pods tucked in for a couple of weeks to make it vanilla scented.
**whisk 3-4T organic heavy cream until soft peaks. Add 1t vanilla sugar, then whisk to stiff peaks. Takes under 1 minute to prepare.
